Spinach Casserole - CORE

Introduction

A core adaptation of my mom's spinach casserole. A core adaptation of my mom's spinach casserole.
Number of Servings: 6

Ingredients

    8 oz Monterey Jack Style soy cheese
    1 cup canned spinach - drained
    1/2 cup flour
    1/2 skim milk
    1/4 canola oil
    1 egg
    1/2 tsp salt
    1/2 tsp baking soda

Directions

Mix all ingredients together in bowl. Pour into a 9x9 inch glass pan. Bake 35-45 minutes at 350 degrees or until light brown on top. Let sit for 10 minutes before cutting. Makes 6 servings.

**Note if doing Core, one piece contains your daily oil limit**

The original recipe calls for Monterey Jack cheese instead of soy cheese and butter in place of canola oil.
