Squash Casserole

Ingredients

    4lbs frozen squash
    1/2 cup light mayo
    2 tsp Splenda
    27 Ritz crackers-crumbled
    1 1/2 cups shred chedder cheese
    1 egg- beaten
    salt & pepper to taste

Directions

Makes 1 9x12 inch pan approx 12 servings

Cook & mash squash salt & pepper to taste. Drain when done. Mix with mayo, splenda 1/4 of cracker crumbs and 1/4 cup of cheese and pour into 9x12 dish(lightly sprayed with butter-parkay spray) Pour into baking dish cover with remaining crumbs then top with remaining cheese. bake at 350* for 25-30 minutes.
