Perch Filets with Olive and Tomato Salsa

Introduction

You won't believe how easy this dish is to make! If perch is not available, you may substitute any white fish that is. If you don't like your salsa too spicy, use half a chili pepper. Ingredients

    4 perch (or other white fish) fillets
    lemon juice
    olive oil
    sea salt
    fresh black pepper
    For the Salsa:
    250 g. olives, drained
    1 can of peeled tomatoes, drained
    1 chili pepper, coarsely chopped
    3 cloves garlic, coarsely chopped
    3 sprigs fresh oregano
    fresh basil leaves
    lemon juice
    olive oil
    sea salt
    fresh black pepper

Directions

Place your fish in a baking dish, sprinkle with salt and pepper, squirt the juice of 1 lemon on them and drizzle with 1 tablespoon of olive oil. Broil them in the oven at 200°C for 20 -25 min. In the meantime, start making the salsa. Place all the ingredients in a food processor and mix until the olives and tomatoes are coarsely chopped and well-combined with the garlic and chili pepper. Taste and adjust seasoning accordingly. once your fish is done, put the filets on individual plates and top with salsa. Makes 4 servings of 1 filet each!
