Ingredients

1 Cup Sugar
1 Large Egg, Slightly Beaten
1 Teaspoon Baking Soda
1 Cup Peanut Butter (Smooth)
Directions
Preheat oven to 350 degrees
Combine all ingredients until smooth
Use medium cookie scoop and drop onto an ungreased cookie sheet
Use a fork to make a crisscross pattern on top of each cookie
Bake 10-15 minutes

This recipe is great! My cookies turned out just perfect. I didn't have the problem with the crumbling. I baked them 10 minutes then I left them on the cookie sheet a few minutes before moving them to a cooling rack.

I have been making these cookies for several years. Like other reviews I have never used baking soda in mine. I did like a couple of the ideas I saw in some other reviews, add 1 t vanilla or use brown sugar. Definitely bake for a shorter amount of time, 10 min max, or they will be overcooked. - 9/27/12

I've made these with 1/2c brown sugar, 1/2c white sugar and 1c PB. They're often crumby, but that makes them a hit at work since they can't easily take a whole cookie. Adding the egg makes them chewy, but they do stay together. Haven't tried baking soda, but original recipe I found had it, no egg - 7/20/12

I love these - have never added the baking soda before and they turn out perfect. They are also good as thumbprint cookies where you make a thumb depression and fill with a little grape jelly. Or push in a chocolate kiss. I wonder if you could use an alternative sweetner but haven't tried. - 6/29/11

I'm the only GF'er in this house, but my family lovingly puts up with my "strange" recipes. So here's the best compliment I can offer: "Wow Mom, these taste just like regular cookies."
