Lentil and Spinach Soup

Number of Servings: 8

Ingredients

    2 cups lentils ( i like it wish green better than red)
    8 cups water
    1 carrot, chopped
    3 stalks celery
    1 yellow onion
    1 potato, peeled and chopped
    1 can (14oz) ready-cut tomatoes
    1/2 tsp. dried sage
    2 cloves garlic, minced
    1 tsp. salt
    1/2 lb. spinach, washing and cut into 1/2 inch strips

Directions

Combine all ingredients, except spinach, in a large stockpot. Bring to a boil, cover and reduce heat. Simmer until lentils are tender, about 45 minutes. Add spinach and simmer for another 5 minutes.
