Introduction

This is a great dish for a cook out, picnic, potluck or as a side dish for dinner I make it in large batches because it goes very fast This is a great dish for a cook out, picnic, potluck or as a side dish for dinner I make it in large batches because it goes very fast
Number of Servings: 40

Ingredients

    11 Cups cooked whole wheat Fusilli or Routoni Pasta
    1 Large Red Pepper
    1 Large Green Pepper
    1 Large Red onion
    2 Cups Grape Tomatoes or Plum Tomatoes
    1/3 Cup Olive Oil
    1 Cup Graded Parmesan Cheese
    2 Tablespoons Garlic
    4 Tablespoons Oregano
    1 Teaspoon Ground Black Pepper

    For a variation almost any vegetable could be substituted or added in addition to the ones above some of my favorites are;
    Strips of carrots
    Sliced cucumbers
    Sliced zucchini
    Sliced celery
    Black olives

Directions

Cook drain & cool 1/2 bag of Fusilli or Routoni Pasta
Slice peppers & onions & plum tomatoes in to long strips
Leave Grape Tomatoes whole
Add in olive oil & stir until everything is covered
Add cheese & spices & stir again once everything is well mixed store in the fridge until you serve it
Makes 40 - ½ cup servings
