Almond flounder fillets

Ingredients

    2 frozen skinless flounder fillets, thawed
    6 small fresh mushrooms, sliced
    2 TB. Italian bread crumbs
    11 whole almonds, chopped
    1 TB. butter
    1 TB. olive oil

Directions

Heat the oil and butter in a large, heavy skillet over medium high heat. Mix the crumbs and almonds together and dredge the fillets in the mixture. Place the fillets into the frying pan along with the sliced mushrooms. Brown on each side turning only once. Turn carefully with a spatula to keep the fillets from falling apart. Salt and pepper to taste. Enjoy!
