Gina Lollobrigida Chicken

Number of Servings: 4

Ingredients

    2 egg whites
    1 tbsp. skim milk
    1/3 c. bread crumbs
    1/3 c. Parmesan cheese
    1 tsp. dried oregano
    1/4 tsp. black pepper
    4 Boneless skinless cheick breasts, pounded to 1/4 inch thickness
    1 large tomato, diced
    4 small slices part skim mozzarella cheese

Directions

Whisk egg & milk. Mix together bread crumbs, Parmesan, oregano and pepper.
Dip chicken in egg mixture, then dredge in bread crumb mixture & set on clean plate.
Spray skillet with cooking spray & heat over medium-high heat. Cook chicken for 3 - 4 min. per side. Transfer chicken to casserole dish. Top each chicken with 1/4 of tomatoes and a slice of the mozzarella. Broil for 1 - 2 minuted 3 -4 inches from heat, until cheese bubbles and turns golden.
