Pumpkin Cookies

Ingredients

    1/2 cup shortening
    1 1/2 cup sugar
    1 cup pumpkin
    1 egg
    1/2 teaspoon salt
    1 teaspoon nutmeg
    1/2 cloves
    1 teaspoon cinnamon
    1 teaspoon vanilla
    1 teaspoon baking soda
    1 teaspoon baking powder
    2 1/2 cups flour
    2 cups special dark chocolate chips

Directions

Cream shorting ans sugar. Add pumpkin and egg. add vanilla. Sift together dry ingrediants. Add to egg and shortening mixture. Add chocolate chips.
Bake at 375 degrees for 13 minets.
Makes 4 dozen cookies

    These are wonderful, I will say I made them into a bar cookie instead, I just spread the dough in a pan and baked it for about 35 minutes. Delicious! - 11/25/09

    Very good!I didn't have dark chocolate chips so I just chopped up some dark chocolate squares.They really satisfied my craving for something pumpkin, but with fewer calories.I will definitely being making these again! - 10/30/08

    Glad you enyoyed them. I havent really checked them for lowest calorie count. probably in the middle. Not so low as to loss flavor. thanks JB

  • They turned out delicious. I ate one straight from the oven with the chocolate chips melted. It was very delicate, as in not too hard or not too chewy, in other words just right. - 10/25/09

  • These were really good, even though i made them without the chocolate chips (trying to avoid sugar)! i also didn't have any clove but the nutmeg and cinnamon were plenty spicy. Will make again. - 1/6/09
