Introduction

Finding the cupboard bare of whole wheat flour, I set out to make some healthier pancakes with the reduced fat baking mix I had on hand. This recipe went over quite well with my family, including a picky husband and three children. Finding the cupboard bare of whole wheat flour, I set out to make some healthier pancakes with the reduced fat baking mix I had on hand. This recipe went over quite well with my family, including a picky husband and three children.
Number of Servings: 34

Ingredients

    4 cups Heart Smart Bisquick
    2 large eggs
    3 1/3 cups skim milk
    4 tbsp. flax seed
    4 tbsp. wheat bran
    2 medium bananas, quartered and sliced
    2 cups blueberries

Directions

Mix baking mix, eggs and skim milk. Add flax seed and wheat bran. Stir well. Batter will be slightly lumpy. Gently fold in bananas and blueberries.

Spray griddle with non-stick spray. Pour pancake batter by 1/4-cup portions onto heated griddle. (I cooked mine at 300 degrees F.) Turn to cook second side. Remove and keep warm, or serve immediately.

Makes approximately 34 pancakes, about 4 inches in diameter.
