Green Beans with Bacon and Caramelized Onions




Number of Servings: 9

Ingredients

    4 bacon strips
    2 large onions, cut lengthwise into wedges
    2 lbs whole green beans (fresh or frozen)
    3 tbsp cider vinegar
    4 1/2 tsp brown sugar
    1/4 tsp salt
    1/4 tsp pepper

Directions

In a skillet, cook the bacon until crisp. Drain well and crumble. In 2 tbsp of the drippings, cook onions over med-low heat until tender and golden, about 50 minutes.

Cook beans until crisp-tender. Drain. Stir the vinegar and brown sugar into the onions; add beans. Cook uncovered over medium heat for about a minute. Add bacon, toss well, season and serve.

Makes approximately 9 servings.
