Chicken Spaghetti (Squash)

Introduction

This is an all natural food recipe. I am doing a cleanse so I wanted to create something different. This was really good when you cant have pasta. It is very low in calories, fat and carbs. Also a great way to get in those veggies This is an all natural food recipe. I am doing a cleanse so I wanted to create something different. This was really good when you cant have pasta. Number of Servings: 4

Ingredients

    1 lb Boneless skinless chicken breast tenders
    1/2 c mushrooms
    1/2 c celery
    1/2 c onion
    1/2 c bellpepper
    2-3 small tomatoes
    Spaghetti squash
    2 Tbsp organic butter
    water
    sea salt, pepper and parsley to taste

Directions

Preheat oven to 350*. Cut squash in half. Place on a cookie sheet skin side up and bake for 35-45 minutes.
Meanwhile add butter to a skillet and saute mushrooms, celery, onions, bellpepper. Add cut up chicken tenders and cook. I let it brown and added small amounts of water only to keep it from sticking. While cooking add tomatoes to the blender to puree. When chicken is done add the pureed tomatoes and about a cup of water and let it simmer. Add sea salt , parsley and pepper to taste.

When squash is ready, take a fork and scoop it out legnthwise. Add 1 Tbsp butter and salt to taste. You can serve it seperate from your chicken and sauce or mix.

If you want to thicken your sauce you can puree some of the squash and add to the sauce.
