Heavenly Spinach REDUX

Introduction

This is TAHLON's wonderful recipe redone to make it a little lighter on calories. Even this is fairly high in calories but the fat is halved.
I also changed the portion to 8 servings instead of 18!! 1/8 cup isn't much for a side dish.

Number of Servings: 8

Ingredients

    2-10oz packages frozen chopped spinach
    1 cup mushrooms, sliced
    2 tbsp I Cant Believe It’s Not Butter Lite
    1/2 cup light mayonnaise
    1/2 cup reduced fat sour cream
    1/2 cup Parmesan cheese
    ¼ tsp garlic powder
    ½ tsp Italian seasoning
    1 15 oz can artichoke hearts in water (rinsed and drained)
    3 tomatoes
    1/2 cup Italian-style bread crumbs
    Salt and pepper to taste

Directions

Cook spinach and drain.
Spray pan with spray oil.
Saute' mushrooms in 1 tbsp I C B I N B L
Combine mayo, sour cream, and cheese.
Chop artichoke hearts into bite size pieces, add garlic and Italian seasoning.
Stir in artichoke hearts, spinach, and mushrooms.
Season to taste with salt and pepper.
Pour in greased 13x9 inch dish.
Slice tomatoes and place on top in one layer.
Spray pan with spray oil.
Saute' bread crumbs in 1 tbsp I C B I N B L and sprinkle over casserole.
Bake at 325 degrees for 20 minutes.



for comparison: at 18 servings: 84 calories and 4.8 gms fat (vs 109. calories and 8.3 gms fat).

If you use fat free mayo and fat free sour cream the change for 8 servings is 144.3 calories and 4.7gms fat. (18 servings would be 64.1 calories and 2.1 gms fat)
