Introduction

Crunchy and nutty flavorful romaine salad with toasted oat bran bread for croutons, for a light lunch. Serve with 8 oz. glass of spring water and squeeze of lemon slice. Ingredients

    Romaine Lettuce, 6 - 8 leaves
    1/4c or 2T Kraft Mozzarella Finely Shredded (Optional) Part Skim Cheese (or your fav low-fat shredded cheese)
    1T Toasted Sesame Seeds
    1T Extra Virgin Olive Oil
    1T Cider Vinegar
    1/2t Fresh Tarragon, chopped
    1 Clove Garlic chopped fine
    Ground Black Pepper to taste
    1 Slice Oat Bran Bread, toasted and cubed

Directions

Break romaine into bite size piece and toss into large serving dish. Add sesame seeds, tarragon, garlic, pepper. Toss. Add oil, vinegar. Toss. Add cheese and croutons. Makes one large serving for lunch entree or 2 servings for salad side dish.
