Purple Brainfood Breakfast

I use old fashion, steel cut oats that take 30 minutes to cook, such as McCain's Irish Oatmeal. Most people list a 1/2 cup prepared as a serving, but the nutrition info on the can lists a 1/4 dry as a serving. Made per directions with 1 cup water, you will end up with just short of 1 cup of hot cereal. If you would like fewer calories in your breakfast, up the blueberries to 2 cups and then eat half a half cup of the finished cereal as a serving. Ingredients

1/2 cup dry Irish Oatmeal (steel cut oats)
2 cups water
1/2 tsp salt
1 cup frozen, unsweetened blueberries
1 oz. walnuts
1 tsp cinnamon
1 medium banana to slice on top of finished cereal
Directions
This makes 2 servings of 1 cup cereal each.
1. Bring water with the frozen blueberries,chopped walnuts, salt and cinnamon to a boil.
2. Stir in dry oatmeal and cook about 5 minutes on high flame, until it starts to thicken and gets a smoothness to it.
3. Reduce flame to simmer and let simmer uncovered for 30 minutes, stirring occasionally.
4. You can cook the banana into the cereal for a subtle sweetness, or slice half a banana over each serving.
