Black Bean Salad

Ingredients

    2 - 16 oz can black beans
    2 - celery ribs
    1/2 medium yellow bell pepper
    1/2 medium green bell pepper
    4 scallions
    2 medium tomatoes
    1 tsp ground cumin
    1/2 tsp. salt
    1/4 tsp. ground pepper
    2 Tbsp. red wine vinegar
    1/4 c. olive oil
    2 Tbsp chopped chilantro or parsley

Directions

Drain and rinse beans. Chop all veggies into 1/4 inch cubes. In a medium bowl, combine all ingrediants. Toss to mix.
