L.R. Raisin bran muffins with flax

Ingredients

    1 cup whole wheat flour
    1 cup oat bran
    1/2 cup ground flax seed
    1 cup brown sugar
    1 tsp. salt
    1 T. cinnamon
    1 tsp. ginger
    1 tsp. nutmeg
    1/2 tsp. cloves
    1 tsp. baking soda dissolved in 1/4 cup water
    2 cups buttermilk
    2 eggs
    2 T. oil
    1/2 cup applesauce
    3 cups raisin bran

Directions

Preheat oven to 375 degrees. Spray 24 muffin cups with non-stick spray. In a large bowl, combine whole wheat flour, oat bran, flax, sugar, salt, cinnamon, ginger, nutmeg, and cloves. In another bowl, whisk together soda water, buttermilk, eggs, oil and applesauce. Stir wet ingredients into dry. Add raisin bran and stir until moistened. Divide into 24 muffin cups. Bake for about 20 minutes or until done. Makes 24 servings.
