April DB's Creamy Cheesy Chicken over Rice

Introduction

Forgive me if the measurements are a little off, this is a recipe I threw together a few year ago. I had gotten off work late, hadn't gone to the grocery store and my husband was on his way home from work.
So...I looked to see what I had on hand and this is what I came up with.
Forgive me if the measurements are a little off, this is a recipe I threw together a few year ago. I had gotten off work late, hadn't gone to the grocery store and my husband was on his way home from work.
So...I looked to see what I had on hand and this is what I came up with.

Number of Servings: 6

Ingredients

    1 lb chicken boneless skinless chicken breast
    1 cup diced onions
    1 cup diced celery
    1 cup dicd carrots
    8 oz Velveeta 2% cubed
    1/4 cup of milk
    1 can Cream of Chicken soup
    4 Tbs olive oil divided
    salt and pepper to taste
    3 cups cooked rice

Directions

Heat 3 tbs olive oil in a 4 qt pot. While the oil is heating salt and pepper the chicken breast. Cook chicken breast medium heat for 5 minutes on each side. Remove chicken from pot to a plate. In the same pot add the remaining oil plus vegetables. Cut chicken into bite sized pieces return to pot when chicken is no longer pink add cream of chicken soup, velveeta and milk. Stir occassionally until cheese has melted completely. Serve over a bed of warm rice and enjoy.
