CG's Meat Pasta Sauce

Number of Servings: 12

Ingredients

    1 tbs. EVOO
    4 cloves Garlic peeled, minced
    1 cup raw onion chopped
    1 lb. lean chopped beef
    1 6oz can tomato paste
    1 29 oz can tomato puree
    1 cup/8oz can tomato sauce
    water up to 4 oz
    1/2 tsp Hot Pepper Sauce
    Black Pepper, 2 dashes
    4 tsp. Granulated Sugar
    2 tsp. Basil fresh chopped, can add more
    5 sprigs parsley chopped fine
    2 lg. Bay Leaves whole

Directions

Heat oil in dutch oven. Add the garlic and stir well. Add the onions, and cook until just slightly browned.
Add the beef and stir and cook until brown all the way through.
Stir in the tpmato paste and cook for 2-3 minutes on med/high heat. Add the puree, and stir well.
Add the tomato sauce and stir well.
Use the water to to rinse out each can, then add to the sauce, to thin it just a bit.
Add the hot sauce and stir well. Lower heat, and start to simmer. Add the black pepper, stir well.
Add the sugar 1 spoonful at a time and stir and taste. Add until your desired amount and taste.
Add the basil and parsley and stir well.
Add the bay leaves and stir, cover and simmer on low, for as short as 45 mins - 1 hour.
OR
You can really make the an all day gravy and cook slow for 2-4 hours. You can also add more meat to the pot, like browned sausage, chicken, or pork pieces. Serve over pasta of your choice, cooked al dante..! Enjoy..!!
