Sweet Potato Casserole

Introduction

Ingredients

    4 Medium sweet potato, baked and mashed
    1 Cup *Stonyfield Farm Lowfat Plain Yogurt
    1 1/2 cups Nature's Path Organic Pumpkin Flaxplus Granola
    1 Cup crushed pineapple in its own juice
    1 Cup pecan halves

Directions

Preheat oven to 375 degrees F. Scrub sweet potatos and bake for 1 hour or until soft/baked through. Mix pineapple and granola and set aside. When potatos are cool enough to handle, peel and mash. Add potato and yogurt to pineapple mixture. Reserve 12 pecan halves and corsley chop the remainder. Mix chopped pecans into potato mixture. Lightly oil 9x9 baking pan with vegetable oil. Pour mixture into pan and top with remaining pecan halves. Bake an additional 15 min. until top is slightly browned. Makes 8 servings.
