Chicken Thighs with Roasted Apples

Ingredients

    2 Gala Apples, roughly chopped
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1.4 tsp pepper
    pinch of kosher salt
    1 clove minced garlic
    4 skinnless,boneless chicken Thighs


Directions

serves 2,2 thighs and half the apple mixture each
preheat oven 475degrees
combine nutmeg,cinnamon and garlic.
coat the apples with the mixture.
spinkle chicken with the salt and pepper.
spread apple mixture on a jelly roll pan which has been coated with vegetable spray. and arrange the thighs on top of the apple mixture. bake in the oven for 25 minutes or until chicken is done and apple is tender. serve the thighs with the apple mixture on top .
