Ingredients

    The following ingredients will make 3 smaller loaves.
    1/2 cup Smart Balance Light Butter with Flax Seed
    1/2 cup Brown Sugar
    1/4 cup Splenda Brown Sugar Blend
    1.5 cups Banana
    1.5 tsp Vanilla Extract
    1.5 cups All-Purpose Flour
    1/2 tsp Baking Soda
    1/2 tsp Salt
    1/2 cup Quick Cooking Oats

Directions

Preheat oven to 350 F. Lightly grease 1 9x5 inch loaf pan or 3 smaller bread pans.

In a large bowl, cream together the butter and sugar. Stir in the bananas and vanilla.

In a separate bowl, sift together flour, baking soda, salt, corn starch. Beat into creamed mixture. Stir in oats. Pour into prepared pan(s).

Bake in preheated oven for 40-50 minutes or until toothpick inserted into the center of the loaf comes out clean.

Makes 6-8 slices of a small loaf.
