Ingredients

    2 - 4 boneless chicken breast
    salt and pepper
    1 tsp thyme
    1 oz butter (divided)
    1 tbs olive oil
    .5 cup gruyere or swiss cheese
    1 tbs dijon mustard
    bay leaf
    1 oz butter
    .25 cup white wine
    .5 cup light cream (5%)

Directions

Salt and pepper chicken. Saute with 1 tbs. butter and olive oil, bay leaf and thyme (about 10 to 15 min.) Remove chicken and discard juices. In the same pot reduce butter, cream and wine to half volume. Remove from heat and stir in mustard and cheese. Mix in chicken until heated through.
