Italian Pasta Salad

Introduction

Number of Servings: 8

Ingredients

    7oz Barilla Plus Rotini
    1 bunch fresh spinach washed thoroughly
    3oz parmesan cheese grated
    2 cups radishes chopped
    1 large red bell pepper chopped
    1/2 red onion diced
    3 cup cherry tomatoes halved
    Juice and zest of 1/2 lemon
    1 cup fresh basil chopped
    1 can navy beans
    Salt and pepper to taste

Directions

While boiling the water for the pasta wash the spinach
Cook the spinach over medium low heat in a saute pan (use cooking spray to eliminate calories & fat)
When spinach has begun to wilt add lemon juice and a dash of salt and pepper
When spinach has cooked take off the heat and chop the rest of the vegetables
cook pasta according to directions
rinse the beans
after the spinach has cooled enough to handle roughly chop it
mix pasta, vegetables, beans, and cheese together in a large bowl
Salt and pepper to taste
Dress with 1-2tbsp fat free Italian dressing or See my Pasta Salad dressing recipe
This makes approximately 8 one cup servings
