4 lbs. 4 oz. elk meat cup into strips 6 cloves garlic 6 T. lemon juice 1-1/2 T. cumin 1 T. seasoned salt 1-1/2 tsp. chili powder 1 tsp. red pepper flakes 4 cups onions, cut into strips 4 cups green peppers cut into strips
Spray a large cast iron skillet with non-stick spray. Heat over medium heat and stir-fry meat in skillet until liquid is absorbed and meat is no longer pink. You may need to do this in 2 or 3 batches. Place meat in a large crock pot. Add all the seasonings. If meat is a little dry, you may need to add a little water. Cook on high for about 2 hours. Add onions and peppers and cook for about another hour, stirring occasionally. Makes about 80 ounces.
