Pumpkin Spice Loaves

Introduction

Thanks to my Mom for the idea--and thanks to a fellow Sparker that gave her the idea from a chocolate pumpkin cake. Thanks to my Mom for the idea--and thanks to a fellow Sparker that gave her the idea from a chocolate pumpkin cake.
Number of Servings: 16

Ingredients

    1 15 ounce can of Libby's 100% pure pumpkin
    1 box mix of Duncan Hine's Moist Deluxe Spice Cake
    1 - 1.25 cup water (based on what consistency you want)

Directions

Preheat oven to 350 degrees for metal/glass pans, 325 degrees for dark or coated pans (per box instructions)

Mix pumpkin, cake mix, and water in a bowl.

Pour into mini-loaf pan (loaves are approx. 2 inches wide by 4 inches long).

Bake for 23-25 minutes. (Time approximate--will have to check for doneness.)

Makes 16 mini-loaves (1 loaf = 1 serving)

  • I made these to go with dinner on Halloween when my parents and grandfather were coming over. They loved them. My husband and I didnt care for them- But we are not big fans of pumpkin pie either. - 11/3/08

  • What size can of the Libby's pure pumpkin do you use? I bought the 15oz size but there is a larger can as well. - 10/31/08

  • I have made this recipe many times before seeing it here. I don't use any water and I use a spice cake mix. It is delicious with chocolate chips, but I guess that defeats the healthy part ;) . - 10/29/08

    LOL--oops!!! I didn't realize until you commented--I forgot the end of the cake mix in the ingredients. THANK YOU!! It is a Spice Cake, btw.

  • This is an OLD Weight Watchers recipe. A good one- but please give the credit where it belongs.I first heard about using canned pumpkin with cake mixes at a Weight Watchers meeting in 1985. - 10/22/08

    sorry, but I didn't get it from weight watchers, so it would be hard for me to give the credit to them. I would be willing to add the sparker's name of who suggested the chocolate cake mix with the pumpkin, since it was that person's idea/post that sparked my mom into trying it with spice cake.

  • Coincidence! I made this the other day inspired by a Sparker that recommended using Yellow cake mix, but I didn't have any so I used Devil's Food w/pudding. I also added Pumpkin Pie spice and instead of frosting I used whipped cream. Very good recipe! - 10/22/08

  • Funny, I had made these this weekend to bring to a potluck lunch. I added a tablespoon of pumpkin pie spice to add to the batter and they came out great in cupcake forms. I frosted them with homemade sugar free cream cheese frosting. Even kids chose them over the chocolate cakes there! - 10/22/08
