1 small eggplant, in cubes
225 gr. zucchini, peeled, in cubes
1 small red pepper
1 teaspoons Olive oil
1 medium onion, chopped
2 garlic cloves, chopped
1 large tomatoe, chopped
1/4 cup tomatoe juice
Fresh basil to taste
1/4 teaspoon salt
Add the rest of the oil to the pan. Put the tomatoe juice and the tomatoes and let them cook until they form a sauce.
Mix the sauce and the vegetables. Season with pepper, parsley, salt and basil. Serve hot ot cold.
