Judy's Oatmeal & Cottage Cheese pancakes

Introduction

This is a modification of many receipes that I've see on here. Modified for the ingredients I have in my house today :) This is a modification of many receipes that I've see on here. Modified for the ingredients I have in my house today :)
Number of Servings: 3

Ingredients

    1pkt Kashi Go Lean Oatmeal (ground in magic bullet)
    1/2 cup lowfat cottage cheese
    2 eggs
    cinnamon
    vanilla extract
    splenda

Directions

Empty packet of oatmeal in Magic Bullet or blender and grind until finely ground. Add 1/2 cup cottage cheese and 2 eggs and spices. Heat frying pan with non-stick spray. Cook pancakes until done (keep an eye on it cause they are a little heavier than regular pancakes).

Makes 3 -31/2 inch pancakes.
