Ingredients

1 lb 93% lean ground beef
1 chopped onion
1 chopped bell pepper (small)
1 can mexicorn (with liquid)
2 cans chili beans (with liquid)
1 can petite diced tomatoes (with liquid)
Garlic powder to taste
Chili powder to taste
Dash ground cumin
1 cup tomato juice or V8
1 cup brown rice
1 cup fat free shredded cheddar
Directions
Preheat oven to 350*
Spray a large oven proof skillet with cooking spray. Brown ground beef, onion and green pepper. Sprinkle with seasonings. Add remaining ingredients except cheese. Do not drain corn or beans. Bring to a boil. Cover and place in oven for one hour. Remove from oven and sprinkle with cheese. Return to oven and broil until cheese is bubbly.
Makes 6 generous servings.
