Crockpot Fajitas

Introduction

Slow cooked tender chicken and veggies just need to be wrapped up and eaten ! Slow cooked tender chicken and veggies just need to be wrapped up and eaten !
Number of Servings: 8

Ingredients

    4 boneless, skinless chicken breasts
    1 sliced red bell pepper
    1 sliced green bell pepper
    1 sliced onion
    2 tsp taco seasoning
    .5 cup salsa
    8 fat free flour tortillas
    2 cups shredded lowfat cheddar cheese

Directions

place chicken breasts in crockpot, sprinkle with taco seasoning, layer on peppers and onions then top with salsa. Cook on low for 5-8 hours.
Remove chicken and shred with 2 forks. place peppers and onions in a strainer to remove the juice. Heat tortillas and plce 1/2 chicken breast in and top with 1/4 cup cheese and 1/8 pepper and onion mixture.

  • I made this tonight. I used a different recipe which called for lime juice and chicken broth. Next time I will omit as it was very water and the seasonings did not come through. Extremely easy though!! - 4/5/10
