Hearty Lentil Soup

Introduction

Number of Servings: 2

Ingredients

    1/2 cup rinsed uncooked lentils
    2 cups water + 2 packets beef boullion (or 2 cups low-sodium beef or vegetable broth)
    1/2 cup diced onion
    1/2 cup diced carrots
    1/2 cup diced celery
    3/4 cup diced pared potatoes
    2 Tbsp chopped fresh parsley
    1 garlic clove, minced
    1 bay leaf
    1/8 tsp ground cumin

Directions

Makes 2 servings

In 2-quart saucepan, combine lentils & water and bring to a boil. Reduce heat, cover pan, and simmer til lentils are tender (about 20 min)

Chop veggies while lentils simmer.

Add remaining ingredients and stir to combine; cover and cook over low heat til potatoes are tender (20-30 min)

Remove bay leaf before serving.
