Ingredients

    10 eggs
    1/2 10 oz package frozen broccoli
    1 small onion diced
    3 cloves garlic -minced
    12 tater tots-frozen
    1 C shredded cheddar or colby (or your favorite)

Directions

preheat oven to 350 degrees. In each cup of a muffin/cupcake pan place one tater tot, diced onion,and broccoli florets. In a separate bowl scramble the eggs with a splash of water and divide evenly between the 12 muffin cups sprinkle grated cheese over the top of each and bake for about 15 minutes or until the egg sets and the cheese is lightly browned.
