Introduction

I found this recipe when I was preparing for an Egyptian themed book club meeting. It is a simple yet tasty soup that is good for those cold winter days. Number of Servings: 8

Ingredients

    • 1 tbsp olive
    • 2 medium onions, chopped
    • 2 cloves Garlic, crushed
    • 1 tsp Coriander, dried
    • 1 – 19 oz can chickpeas
    • 3 cups Tomato juice
    • 4 cups Water
    • ½ cup Rice, rinsed
    • ¼ tsp Cumin
    • ¼ tsp allspice
    • To taste Salt & pepper

Directions

• Melt the butter or margarine in a saucepan over medium heat.
• Sauté the garlic and onions until they turn golden brown.
• Add the coriander leaves and stir-fry for a further few minutes.
• Stir in the remaining ingredients and bring to a boil.
• Cook over medium heat for about 20 minutes, or until the rice is cooked.
• Serve warm with crusty bread.
