Introduction

I found this recipe when I was preparing for an Egyptian themed book club meeting. It is a simple yet tasty soup that is good for those cold winter days. Number of Servings: 8

Ingredients

    1 tbsp olive
    2 medium onions, chopped
    2 cloves Garlic, crushed
    1 tsp Coriander, dried
    1 19 oz can chickpeas
    3 cups Tomato juice
    4 cups Water
    cup Rice, rinsed
    tsp Cumin
    tsp allspice
    To taste Salt & pepper

Directions

Melt the butter or margarine in a saucepan over medium heat.
Saut the garlic and onions until they turn golden brown.
Add the coriander leaves and stir-fry for a further few minutes.
Stir in the remaining ingredients and bring to a boil.
Cook over medium heat for about 20 minutes, or until the rice is cooked.
Serve warm with crusty bread.
