Cabbage Rolls

Ingredients

    1 lb ground turkey
    1/2 c chopped onion
    1 c cooked brown rice
    1 can cooked, diced tomatoes, blended
    1 small can tomato paste
    1 c tomato sauce
    2-3 tbsp brown sugar
    1 tbsp honey
    salt and pepper to taste
    14 med-large cabbage leaves, cooked in boiled water until semi soft

Directions

First, prepare cabbage leaves and rice and set aside. That process usually takes 30-40 mintues. I will cook the rice and cabbage leaves at the same time, ahead of actual time I cook the rest of it. To cook cabbage, bring a large pot (big enough to hold whole cabbage head) of water to boil. Place cored head of cabbage into water, and as outer leaves soften, peel off and set aside. Do this until you have as many as you need.

For the rest of the recipe, I brown the ground turkey and onion, salt and pepper together. Once browned, I add rice and 1/2 small can of tomato paste, mixing well and set aside. While meat is browning, I blend one can of cooked diced tomatos together, add the tomato sauce, and rest of tomato paste, and brown sugar and honey. I then put tomato sauce mix into another pan and heat, disolving the sugar and honey, and letting it thicken a bit.

Then take your cabbage leaves, adding appx 2 tbsp of meat mixture and then rolling them up like a burrito. Repeat until all meat mixutre is gone. Line a baking dish with rolls and pour tomato sauce mix over top, cooking in 350 degree oven until hot and bubbly. I sometimes also place cabbage rolls into a large stove top safe cooking and pour sauce over them and heat until hot and bubbly. Makes appx 12-14 cabbage rolls.
