Lemon-Parmesan Barley Risotto

Introduction

Delicious, wIth the flavors of lemon and parmesan and chewy, nutty barley. Much easier to make than tradition risotto, too! Delicious, wIth the flavors of lemon and parmesan and chewy, nutty barley. Much easier to make than tradition risotto, too!
Number of Servings: 4

Ingredients

    1 cup pearled barley
    1 1/2 cups chicken broth
    1/2 cup white wine
    1 cup water
    Zest of 1 lemon, grated
    1/4 cup finely shredded parmesan

Directions

Spray pan with cooking spray. Saute barley for several minutes, until lightly toasted and fragrant. Add chicken broth, white wine, and water. Bring to a boil, then cover and simmer 30-45 minutes or until tender.


Before serving, stir in lemon zest and parmesan. Enjoy!
