Mini Quiches

Introduction

Great for a snack or with a simple salad.

Also great to place into kids lunches straight from the freezer as it will keep everything cool.

Number of Servings: 9

Ingredients

    250 grms Beef - Diced
    6 Eggs - beaten well
    1 tbsp each of Yellow, Green and Red Capsicum (bell peppers) - Diced
    Dash of Salt and Pepper to taste
    1 tbsp Olive Oil
    1 tbsp Onion - Diced

    You can also add 1 tbsp of chopped fresh herbs if you wish

Directions

Dice capsicum, onion and beef and put into a fry pan with olive oil. while that is cooking beat 6 eggs with salt and pepper. Pour Beef, Capsicum and Onion mix into egg and mix.

Place spoonfuls into muffin trays lined with muffin papers and bake 20 mins at 180 degrees Celsius.

Once cooked either eat hot or leave to cool and freeze.
