Susan's Veggie Rice Soup

Introduction

Fiber and veggie packed soup that leaves you full for hours! Fiber and veggie packed soup that leaves you full for hours!
Number of Servings: 5

Ingredients

    Ingredients:
    Garlic Salt
    Paprika
    Bay Leaf
    (or whatever seasonings, spices you like)
    1 medium Onions
    3 large Celery stalks
    1 cup Canned Tomatoes,
    6 oz Carrots julienned
    2 packages 10 oz frozen Mixed Vegetables,
    1 T Canola Oil
    2 C Chicken or Vegetable Broth
    2 C Frozen or Fresh Spinach
    1 can Black Beans, rinsed and drained
    2 C Instant Brown Rice

Directions

In canola oil cook down celery, onion, and carrots. Then add mixed veggies, tomatoes, drained beans, spinach, broth, water, brown rice and stir. Then add spices and seasonings to taste. Bring to a boil then simmer on low. I planned on 5 lunches but will easily make more.

You will get slightly different calorie, sodium and fiber counts depending on what products you use.
