Linguini with Broccoli and Red PeppersSubmitted by: TSIDEL
Introductionjust plain yummy. just plain yummy.
8oz linguini or penne pasta (1/2 pound)
8oz fresh broccoli, chopped (1/2 pound)
1 tablespoon and 1-1/2 teaspoons extra virgin olive oil
1-1/2 teaspoons butter
1-1/2 cloves garlic, minced
1/2 red bell pepper, thinly sliced
2 tablespoons shredded Parmesan cheese
Heat olive oil and butter over low heat. Stir in garlic and red & green pepper slices; saute slowly
Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Steam broccoli with 1-2 tablespoons water in microwave for 2 minutes. Drain broccoli and add to skillet. Saute broccoli and peppers until soft.
Toss vegetable mixture with hot pasta. Sprinkle with Parmesan cheese. (After serving, I often put mine back in the microwave to continue melting the cheese a little longer.)
