Pork, Lentil, Wild Rice Soup

This could be done semi-vegetarian if you leave the pork out, or all the way vegie if you use just water or vegetable broth.

Number of Servings: 10

Ingredients

    2 quarts College Inn Culinary Chicken Broth, White Wine & Herb

    3-4 cups water, or homemade salt-free, fat-free chicken or turkey broth (what I used)

    1 large sweet onion, diced
    1 cup carrots, sliced/diced
    Fresh garlic, as much as you like: 6 cloves
    1 cup Lentils, I used the mixed varieties
    one 4 oz box Wild Rice

    1.25 pounds of pork roast, all fat trimmed off

Directions

Get the broths going in your soup pot,
Saute the onion and carrots in olive oil.
Press Garlic into the saute at last minute or so.
Add all into the broth when softened.

Add the lentils and wild rice to the broth.

Cut up the pork roast into bite sized pieces, trim all fat off. Can either saute these first, or just add directly to broth.

Let simmer for a couple of hours until lentils and rice are done.
