Introduction

Adapted to my family size from South Beach, Phase 1 reicipe posted by Kierae.
Because of the cheese and black beans, serving of chicken is cut back. I keep Tyson chicken tenders stored in freezer.

Number of Servings: 4

Ingredients

    1/2 cup Ricotta Part Skim Cheese
    1/2 cup Sour Cream, Low Fat
    3 oz Fat Free Half'n'Half
    15 oz can Black Beans, rinsed & drained
    14 oz can diced tomatoes, drain some of liquid.
    6 oz chicken tenders
    1/4 cup grated cheese, [Mozzarella]

Directions

Preheat oven to 350 degrees.
Steam raw chicken until appears done. Dice.
In casserole dish, mix the ricotta and sour cream and fat free half-n-half. Stir in rinsed & drained black beans. Drain off some of the liquid from tomatoes and add to casserole. Add diced, cooked chicken tenders. Stir well. Lightly sprinkle grated cheese over the top. Bake 350 degrees for 30 minutes or until bubbly.
