Vegetarian Greek Style Quesadillas

Introduction

Fast and yummy! Vegetarian friendly, lovely greek flavor, low fat, loads of protein and fiber... hooray! Fast and yummy! Vegetarian friendly, lovely greek flavor, low fat, loads of protein and fiber... hooray!

Ingredients

    2 Smart and Delicious low-fat, high fiber tortillias (If you cannot find these, any tortillias will do, really)

    *Philadelphia Fat Free Cream Cheese, 1 oz (remove)
    Spinach, fresh, 1 cup (remove)
    Feta Cheese, 0.125 cup, crumbled (remove)
    Onions, raw, 1 tbsp chopped (remove)
    Red Ripe Tomatoes, 0.125 cup cherry tomatoes (remove)
    Kalamata, Green Olives, pitted, 0.5 oz (remove)
    Hummus, 2 tbsp (remove)

Directions

Spread tortillas w/ cream cheese
layer with spinach, feta, tomatoes, onions and olives. Place 2nd tortilla on top.

heat on medium in a greased skillet for 2 1/2 minutes on each side, or until golden. Easiest way to flip is to put a plate on top and carefully flip your skillet upside down, then slide the flipped quesadilla back onto the skillet.

Cut into wedges.

Garnish with hummus and enjoy! (Makes 2 servings)
