Quaker Cornmeal Crusted Chicken

Introduction

A delicious and easy way to liven up the same old chicken A delicious and easy way to liven up the same old chicken
Number of Servings: 10

Ingredients

    1/2c Quaker Yellow Cornmeal
    1/4c all-purpose flour
    2 T grated parmesan cheese
    1.5t Italian Seasoning
    1/2t Garlic Powder
    1.8t Salt
    1/4t Pepper
    1/2c 1% milk
    2.5pounds skinless chicken
    3T margarine, melted

Directions

Combine dry ingredients in bowl.
Dip chicken in milk to coat, then coat with cornmeal mixture.
Place chicken in baking dish.
Brush with melted margarine
Bake 35-45 minutes in 400degree oven

  • Made this dish last week with a couple of tweaks - did not add flour, margarine or salt. I also added an egg white to the milk mixture to help the coating stick. They turned out to be delicious straight out of the oven and even cold the next day! - 1/23/09
