Ingredients

    Nonstick cooking spray (NOT LISTED IN THE SPARK INGREDIENT LIST
    1 tsp Olive Oil,
    4 boneless, skinless Chicken Breast,
    1 10 1/2 oz can reduced sodium/fat chicken Broth
    1/2 cup Onions, chopped
    1/2 cup sliced Celery,
    1 tsp dried Basil
    1/2 tsp pepper
    1 TBS Flour,
    1 TBS Water
    1 cup low fat yogurt (original recipe called for low fat sour cream)
    1/4 cup Parmesan Cheese, grated, .
    8 oz FETTUCCINI NOODLES (NOT LISTED IN THE SPARK INGREDIENT LIST)

Directions

In large skillet, sprayed with cooking spray, over medium-high heat, add oil and chicken breasts. Cook until brown on all sides, remove from heat.
Add broth, onion, celery, basil, salt(if desired), pepper to the skillet. Return chicken to the skillet, cook until chicken is no longer pink.
Reduce heat and simmer for about 10 minutes.

In a medium bowl, mix flour with water and add yogurt (original recipe called for sour cream but I used yogurt)

Add mixture to the skillet and mix well. Cook over medium heat 5-6 minutes until thickened and bubbly.

Serve over FETTUCCINI noodles.
Sprinkle with Parmesan cheese.
Serves 4
