Scrambled egg with salsa and cheddar cheese

Introduction

Quick simple breakfast. Fast and easy to make and very tasty, too. For a fuller meal, serve with a slice of whole wheat toast and possibly some fruit. Quick simple breakfast. Fast and easy to make and very tasty, too. For a fuller meal, serve with a slice of whole wheat toast and possibly some fruit.

Ingredients

    1 large egg
    1 large egg white
    1 tablespoon soy milk
    1 tablespoon salsa
    1/8 cup shredded cheddar cheese

Directions

Spray a small non-stick skillet with cooking spray and put on medium heat.

Scramble egg plus egg white and soy milk.

When the skillet is heated up, pour the egg mixture into the skillet. Allow the egg to cook a little, then stir occasionally until the eggs reach a desired scrambled consistency. Do not over-cook. (Eggs should be a light yellow in color, and nice and fluffy.)

Pour onto microwave-safe plate. Top with salsa and cheddar cheese. If you would like your cheese melted, put plate in microwave and micro on high for about 15 seconds.
