IntroductionQuick simple breakfast. Fast and easy to make and very tasty, too. For a fuller meal, serve with a slice of whole wheat toast and possibly some fruit. Quick simple breakfast. 1 large egg
1 large egg white
1 tablespoon soy milk
1 tablespoon salsa
1/8 cup shredded cheddar cheese
Scramble egg plus egg white and soy milk.
When the skillet is heated up, pour the egg mixture into the skillet. Allow the egg to cook a little, then stir occasionally until the eggs reach a desired scrambled consistency. Do not over-cook. (Eggs should be a light yellow in color, and nice and fluffy.)
Pour onto microwave-safe plate. Top with salsa and cheddar cheese. If you would like your cheese melted, put plate in microwave and micro on high for about 15 seconds.
