Low Carb Chicken Divan

Introduction

This is an adjusted recipe from Linda's Low Carb Chicken Divan. I didn't have any heavy cream and I don't like Curry powder so I used Chili powder instead. Ingredients

    3-4 cups diced cooked chicken
    10 oz. box Frozen Chopped Broccoli
    10 oz. package fresh mushrooms, sliced
    3 stalks celery, diced
    1 lg. onion, chopped
    2 tbls. Butter
    2 tbls. Olive oil
    1 cup chicken broth
    1 3 oz package Cream Cheese
    Salt, to taste
    1/4 tsp. pepper
    1/4 cup mayonnaise
    1/8 tsp. Chili Powder

Directions

Makes 8 Servings

1. Defrost and drain Broccoli. In a large non-stick skillet, melt butter and olive oil. Saute mushrooms, celery and onion unitl soft and lightly browned. Season with Salt, Pepper & Chili Powder.
2. Add the broth. Bring to a boil and reduce slightly. Add Cream Cheese and simmer until thickened. Remove from heat and stir in Mayonnaise.
3. Mix diced chicken, Chopped Brocolli and cheddar cheese together and place in a 9 x 13 baking dish. Pour mushroom sauce over the chicken mixture and blend well.
4. Bake, uncovered, 35-40 minutes until hot and bubbly.
