Parmesan Crusted Chicken

Ingredients

    2 whole chicken breasts boneless & skinless
    2 egg whites
    2 T Cornstarch
    1 T lemon juice
    1 c. dry course bread crumbs
    1 T fresh parsley chopped
    1 t salt
    1/4 t black pepper
    1/2 c Parmesan cheese grated (additional fresh Parmesan, if desired)
    2 T extra virgin olive oil

Directions

- Preheat oven to 450.
- Prepare chicken by halving and then halving again lengthwise. Pound each piece to about 1/2" thick.
- Blend egg whites, cornstarch & lemon juice with fork in wide, shallow dish - set aside.
- Combine bread crumbs, Parmesan, parsley, salt, and zest in second wide, shallow dish.
- Dip breasts in egg white mixture, then roll in bread crumb mixture.
- Place coated breasts on a rack over a cookie sheet - air dry the chicken for 15-20 minutes to help set the crumbs.
- Heat oil on stove in an oven-proof skillet. Saute chicken until golden and crisp on one side, then carefully flip pieces over and cook until golden.
- Transfer entire pan to a 450 degree oven to finish. Cook for 8-10 minutes. Sprinkle with fresh Parmesan cheese in last minute of baking if desired.
