Shayna's Spinach Quesadillas

Introduction

Add 8 Tbs of thick salsa to shredded chicken. stir in 2 Tbs of taco seasoning. Add spinach. add jalapenos and hot sauce to taste.

place one tortilla on plate. top with small amount of cheese, top with chicken mixture. top with additional cheese and finish with another tortilla. repeat until all tortillas are used.

To melt the cheese I heat my gorge foreman to 350 and place the quesadilla in until the top begins to turn golden brown, however a skillet or oven would work took

    2 Boneless Skinless Chicken breasts (boiled and shredded)

    1 package frozen spinach (thawed and pat dry)

    Shredded mild cheddar cheese

    8 Tbs thick and chunky Salsa

    2 Tbs taco seasoning

    Jalapenoes and hot sauce to taste
