a spray of cooking oil
1 small onion finely diced
1 small carrot finely diced
3 cans of crushed tomatoes with garlic and basil
500 g vegetable/chicken stock
Bring to a boil and cook until done.
Serve warm with a dollop of sour cream
& cheese on toast (optional - not included in recipe)
