Chocolate Cake w/ Strawberries (Diet Soda Cake)

Ingredients

-- Chocolate Cake mix (I used Betty Crocker SuperMoist Milk Chocolate
-- 1 12 oz can Diet Pepsi (or Diet Coke)
-- 1/2 package of Cool Whip Lite or Free
-- 1 pint fresh Strawberries (sliced)
Directions
1. Preheat oven to 350*
2. Grease 9x13 pan.
3. Mix together cake mix and soda.
4. Pour into pan.
5. Bake for 25-35 minutes, or until inserted toothpick comes out clean.
6. Cool cake completely.
7. Top with whipped cream and sliced strawberries.
8. Enjoy!!

This was so delicious and so easy. I used the dark chocolate cake mix and Diet Cherry Dr. Pepper although I don't think you could taste any cherry flavor at all after baking. It was delicious plain but I topped it with a tsp of Hershey's Lite chocolate syrup and lite cool whip and choc. sprinkles :) - 9/20/09

This is an AWESOME idea and it tasted GREAT! My husband used Diet Dr. Pepper and put warm blackberries with a tsp of chocolate syrup and a tsp of powdered sugar for my birthday. JUST AWESOME!! It was surprisingly moist, a bit flat (with no eggs), but even so it wasn't dense at all. Thanks!! - 5/8/09

Maybe it didn't turn out right because I don't have a mixer but it was a crumbly mess. My boyfriend took one bite but won't eat anymore beause he found the texture too weird. I thought it tasted OK but I could taste the soda & it's definitely a light cake. - 3/20/09

I'm sorry it didn't turn out for you! I think you are right about the mixer - using an electric mixer makes the batter a little more light and fluffy.

Made this last night but changed a few things. I used a yellow cake mix added about 3 tblspns of cocoa powder and used only a few strawberries but added a banana (both sliced) as the fruit on top of the lite whipped cream. The changes did change the nutritional info slightly. Not much though. Yummy - 4/25/10
