Black Bean Brownies Recipe 2

Introduction

Here is a change from the original black bean brownie recipe I provided. Not for the gluten sensitive, because whole wheat flour is added for extra texture, as well as one more egg. Brown sugar replaces part of the honey in the recipe, making the brownie more cake-like and slightly less sweet. Here is a change from the original black bean brownie recipe I provided. Ingredients

    4 ounces unsweetened baking chocolate
    1 cup unsalted butter
    2 cups cooked, unflavored black beans, drained of liquid
    1 cup chopped walnuts
    1 tbsp vanilla extract
    1/4 cup instant coffee granules/powder, decaffeinated
    1/4 tsp salt (sea salt preferred)
    5 large eggs
    3/4 cup honey
    1/2 cup packed brown sugar
    1/4 cup whole wheat flour

Directions

Preheat oven to 325 degrees.
Melt butter in a saucepan with baking chocolate. Mix well. Set aside.
In a blender or food processor, mix thoroughly 1/2 cup walnuts, black beans, vanilla extract and a few spoonfuls of the melted chocolate and butter. The beans should become smooth and pasty. Set this mixture aside.
In a large bowl, mix together remaining chocolate mixture, remaining 1/2 cup walnuts, instant coffee, brown sugar, whole wheat flour and salt thoroughly. Set this bowl aside.
In a smaller bowl, mix together eggs with a beater until fluffy and frothy. Add honey. Use beater again, making a light mixture. Take 1/2 cup of mixture out of remaining mixture and set aside.
In the bowl of chocolate, coffee and walnut mixture, add the black bean mixture from the food processor and the honey and egg mixture. Use beater to mix very well.
Take a 9"x13" glass pan and spray down with cooking spray (or use butter). Take parchment paper and line pan with it. Spray oil on the parchment paper. Pour batter and evenly distribute in glass pan. With the set aside 1/2 cup honey/egg mixture, pour on top and use a toothpick to poke holes in to the batter for a marbling effect as the brownie cooks. Put in oven. Cooking time is approximately 30-40 minutes, or when brownies have set. Makes 45 2" squares.
These are best cooled completely before cutting, and are even better when kept chilled in the refrigerator.
